Keskek

        This dish, which we cook for our weddings, mevlits, and special occasions, is indispensable for us. Keskek, made from wheat, is soaked overnight, and then placed in a pot with onions and olive oil, and roasted on the stove. Once the onions turn pink, the heat is lowered, and it is left on the stove. When it absorbs the initial water, it is transferred to a bowl, pounded, then emptied again, and meat broth and butter are added. It is boiled on the stove until the water is absorbed, then it is covered, left to steep. Afterwards, it is placed in bowls to be served.
